No Bake Snack

INGREDIENTS
1 cup pitted dates, cut in half and soaked in water for a couple hours
1 cup cashews
1/2 cup coconut flakes
2 tablespoon carob powder
pinch of salt
Optional: additional coconut flakes to coat the balls

DIRECTIONS
Soak the water out of the dates
Add all ingredients to a food processor and mix until the mixture starts clumping into a ball.
Form little balls and store in an air tight container, in the fridge.
You can roll the balls in coconut flakes, if you want to make them less sticky.
