Chicken and Veggies Salad

Makes about 4 servings


INGREDIENTS

  • 2 chicken breasts cooked and chopped

  • 1 1/2 cups chopped tomatoes

  • 1 large diced cucumber

  • 1 diced avocado

  • 1/4 small minced red onion

  • 1 handful minced parsley

  • 2 cups chopped greens (red leaf, green leaf or Romaine lettuce)

DRESSING INGREDIENTS

  • Juice of 1 lemon

  • Juice of 1 lime

  • ¼ cup olive oil

  • 2 cloves minced garlic

  • 1 tbsp honey

  • salt and pepper to taste

Optional: 4 oz feta cheese and 6-8 slices of bacon, chopped


DIRECTIONS

  • Place dressing ingredients in a mason jar, seal and shake well

  • Toss salad ingredients together in a large bowl

  • Start with adding half of the dressing and use more, as needed.

  • Enjoy immediately. If you are not eating the entire salad right away, store in the fridge, without dressing on it.
