Mango and Greens Smoothie

We never waste an opportunity to treat our bodies to some healthy greens. Smoothies make for a great snack and can be packed with a lot of nutrients. Here is one of the recipes we use at our house (this makes enough for me and my toddler):


INGREDIENTS:


  • 2 cups frozen mangoes

  • 3 medium kale leaves

  • 3 medium red leaf or green leaf lettuce

  • juice from half a lemon

  • 10 Stevia drops (or to taste)

  • 2 tbsps soaked chia seeds

  • 2 tbsp hemp seeds

  • 1/3 can full fat coconut milk

  • 1/2 cup water (more or less, depending on your blender)


optional: 2 tbsps collagen powder



DIRECTIONS:


  1. Mix 2 tbsp chia seeds with 1/4 cup water and let it sit for 10 minutes, stirring occasionally

  2. Remove the stems from the kale leaves and discard (some of the more powerful blenders may do OK fully breaking up the stem; you can try leaving it on)

  3. Cut all the greens in half

  4. Squeeze the juice out of the lemon

  5. Add 1/4 cup water, the coconut milk, lemon juice and Stevia drops to the blender

  6. Add the rest of the ingredients

  7. Mix on high for 1-2 minutes, depending on your blender

  8. Clap and dance and show your little ones how proud you are of them for drinking the smoothie and asking for more
